Holyrood Pitch marks the grand finale of the distillery’s Founding Series. Distinctive and daring, Pitch is crafted using 84% Scotch pot malt and 16% brown malt (common in dark porter beers), then fermented with rare red-wine yeasts—Pepe Nero and Toro Nero—typically reserved for red varietals. Finally, it’s matured in Oloroso hogsheads, pulling forward a warm, nutty richness.
49.4% ABV, non chill?filtered, no added colour or sugar

Nose: Rich cacao and blackcurrant, honeyed sweetness with stewed red fruits and a hint of green pepper
Palate: Silky sweetness leads into coffee, raisins, spiced oak, and roasted nuts—think dark chocolate ganache with a phenolic kick
